An easy to make,
delightfully quick vegetable mix.
Beans 120 gm
Cabbage 120 gm
Capsicum 120
gm
Carrots 120 gm
Cooking oil 60
ml/4 tbs
Coriander
leaves, chopped 15 gm/1 tbs
Cumin (jeera)
seeds 5 gm/1 tsp
Ginger,
chopped 10 gm/2 tsp
Onion 120 gm
Pepper powder
2.5 gm/ 1/2 tsp
Potato fingers
120 gm
Red chillies,
whole 2
Salt to taste
Tomato purée
60 ml/4 tbs
White vinegar
15 ml/1 tbs
Wash
and chop all vegetables, except potatoes. Heat oil in a pan.
Add the cumin and whole red chillies and sauté. Add all the
vegetables, salt, pepper and ginger. Stir well. Cover with
lid and cook on slow fire till almost tender. Add tomato
purée and white vinegar. Cook till done.
Remove from fire.

Preparation: 45 minutes
Cooking: 30 minutes
To
Serve: Garnish with chopped coriander. Serve with any roti,
naan or paratha.
