bullet Beans 120 gm
bullet Cabbage 120 gm
bullet Capsicum 120 gm
bullet Carrots 120 gm
bullet Cooking oil 60 ml/4 tbs
bullet Coriander leaves, chopped 15 gm/1 tbs
bullet Cumin (jeera) seeds 5 gm/1 tsp
bullet Ginger, chopped 10 gm/2 tsp
bullet Onion 120 gm
bullet Pepper powder 2.5 gm/ 1/2 tsp
bullet Potato fingers 120 gm
bullet Red chillies, whole 2
bullet Salt to taste
bullet Tomato purée 60 ml/4 tbs
bullet White vinegar 15 ml/1 tbs
  • Wash and chop all vegetables, except potatoes. Heat oil in a pan. Add the cumin and whole red chillies and sauté. Add all the vegetables, salt, pepper and ginger. Stir well. Cover with lid and cook on slow fire till almost tender. Add tomato purée and white vinegar. Cook till done.
    Remove from fire.
  • Time:
    Preparation: 45 minutes
    Cooking: 30 minutes
  • To Serve: Garnish with chopped coriander. Serve with any roti, naan or paratha.
