bullet Potatoes 600 gm
bullet Asafoetida (heeng) a pinch
bullet Black peppercorns 5 gm/1 tsp
bullet Cinnamon 1” stick
bullet Cloves 2
bullet Coconut, grated 30 gm/2 tbs
bullet Cooking oil 45 ml/3 tbs
bullet Coriander leaves, chopped 5 gm/1 tsp
bullet Cumin (jeera) seeds 5 gm/1 tsp
bullet Curry leaves 6
bullet Ginger, chopped 5 gm/1 tsp
bullet Gram (chana), roasted 30 gm/2 tbs
bullet Green chillies 2
bullet Mustard (sarson) seeds 5 gm/1 tsp
bullet Onions, chopped 30 gm/2 tbs
bullet Red chillies, whole 2
bullet Salt to taste
bullet Tomatoes, chopped 30 gm/2 tbs
bullet Turmeric (haldi) powder 5 gm/1 tsp
  • Wash, peel and dice potatoes in half inch cubes. Make a paste of the green chillies, roasted gram, cumin seeds, black peppercorns, ginger, cinnamon, cloves and grated coconut with a little water in a blender. Heat oil in a kadhai. Add asafoetida, mustard seeds, whole red chillies and curry leaves. When mustard seeds start to splutter add onions and sauté lightly.
  • Add turmeric, stir and add tomatoes. Stir for 2-3 minutes. Add potatoes, salt and sufficient water to cover potatoes. Cover and simmer till tender. Add the prepared paste and simmer gently for 4-5 minutes.
  • Note: Saagu can also be made with mixed vegetables.
  • Time:
    Preparation: 30 minutes
    Cooking: 45 minutes
  • To Serve: Garnish with chopped coriander. Serve hot with paratha.
