This is a unique preparation of cottage cheese cooked on a griddle.

bullet Cottage cheese (paneer), cubed 450 gm
bullet Black cumin (shah jeera) seeds 2.5 gm/ 1/2 tsp
bullet Carom (ajwain) seeds 1 gm/a pinch
bullet Capsicum, diced 120 gm/ 1/2 cup
bullet Coriander powder 10 gm/2 tsp
bullet Coriander leaves, chopped 15 gm/1 tbs
bullet Cumin (jeera) seeds 5 gm/1 tsp
bullet Garam masala 1gm/a pinch
bullet Garlic paste 25 gm/5 tsp
bullet Ginger juliennes 5 gm/1 tsp
bullet Ginger paste 25 gm/5 tsp
bullet Green chillies, chopped 2
bullet Oil 45 ml/3 tbs
bullet Oil to fry the cheese
bullet Onions, chopped 180 gm/ 3/4 cup
bullet Red chilli powder 5 gm/1 tsp
bullet Salt to taste
bullet Tomatoes, chopped 180 gm/ 3/4 cup
bullet White pepper powder 5 gm/1 tsp
  • Heat oil in a kadhai and fry the cottage cheese to golden. Heat the griddle. Add 3 tablespoons oil. When oil is hot add cumin and splutter. Add the chopped onions and brown. Add ginger and garlic pastes, green chillies, coriander powder, red chilli powder, white pepper powder, salt and carom seeds. Fry on medium heat. Add chopped tomatoes. Fry till the oil surfaces. Mix in the cottage cheese, capsicum, garam masala, black cumin and cook for 5 minutes.
  • Time:
    Preparation: 10 minutes
    Cooking: 15 minutes
  • To Serve: Garnish with chopped coriander and ginger juliennes. Serve hot with any bread.
