A delicious sweet and sour pumpkin

bullet Pumpkin (kaddu), peeled, cut into cubes 1 kg
bullet Ghee 1 tbsp / 15 gm
bullet Bay leaf (tej patta) 1
bullet Cumin (jeera) seeds 1 tsp / 2 gm
bullet Coriander (dhaniya) seeds 1 tsp / 2 gm
bullet Fenugreek seeds (methi dana) 1 tsp / 3 gm
bullet Fennel (moti saunf), powdered 1 tsp / 2 gm
bullet Onion seeds (kalonji) 1/2 tsp / 3/4 gm
bullet Asafoetida (hing) a pinch
bullet Ginger (adrak) paste 1” piece
bullet Turmeric (haldi) powder 1/2 tsp / 1 gm
bullet Dry red chillies (sookhi lal mirch) 2
bullet Salt to taste
bullet Coriander (daniya) powder 2 tsp / 3 gm
bullet Jaggery (gur) a small lump
bullet Tamarind (imli) pulp 2 tbsp / 12 gm
bullet Garam masala 1 tsp / 2 gm
bullet Green chillies 2-3
bullet Green coriander (hara dhaniya) 2 tbsp / 8 gm
  • Heat the ghee in a pan; add the next seven ingredients and sauté for 1 minute. Add the ginger paste and pumpkin; stir-fry for another 2 minutes. Mix in the turmeric powder, dry red chillies, and salt. Add coriander powder and cook covered, on low heat, for 15 minutes or till half done. Add jaggery, tamarind juice, garam masala, and green chillies. Cover and cook, on low heat, till done. Garnish with green coriander and serve.
