bullet Green chilies 1/2 kg (medium size)
bullet Onions 4 large, thinly sliced
bullet Poppy seeds 2 tbsp
bullet Sesame seeds 2 tbsp
bullet Coriander seeds, cumin seeds, 2 tbsp
bullet Coconut (dried) 1 tbsp
bullet Turmeric powder 2 tsp (roast and grind to a fine paste of each)
bullet Ginger and garlic paste 1 tbsp
bullet Curry leaves 6
bullet Nigella seeds (kalonji) 1 tsp
bullet Salt to taste
bullet Tamarind (imli) 1 cup (soaked in 2 cups hot water)
bullet Dalda or your choice of cooking oil 1/2 cups

Baghar (Fried Garnish)

bullet Cumin seeds 1/2 tsp
bullet Red chilies 6 pods (whole)
bullet Fenugreek seeds (methi) 6
bullet Curry leaves 4
  • Heat oil in a shallow pan. Fry chilies with salt and remove from pan. Immediately put the ingredients of garnish in the oil, stir for 30 seconds, add sliced onions.
  • Fry till pale golden. Add all the spices to the onions along with curry leaves. Now put the chilies in it and fry for 5-7 minutes. Add tamarind pulp to it and cook on low heat for 10-15 minutes.
