bullet Green tomatoes. Cut into big pieces 1/2 kg
bullet Oil ¼ cup / 50 ml
bullet Cumin seeds (jeera) 1/2 tsp / 3 gm
bullet Fenugreek seeds (methi dana) 1/2 tsp / 3 gm
bullet Green chillies, slit 2-3
bullet Red chilli powder 1 tsp / 5 gm
bullet Coriander (dhaniya) powder 2 tsp / 10 gm
bullet Turmeric (haldi) powder 1/2 tsp / 3 gm
bullet Salt to taste
bullet Mango powder (amchur) 1/2 tsp / 3 gm
bullet Sugar a pinch
bullet Garlic (lasan) paste 1 tsp / 5 gm
  • Heat the oil in a wok (kadhai). Sauté the cumin and fenugreek seeds, when they crackle, add the tomatoes and green chillies. Fry for 1-2 minutes. Add all the dry spices and sugar. Cook covered for 5-6 minutes, or till the tomato slices lose their shape. Add the garlic paste and stir-fry for 2-3 minutes. Serve hot with missi roti and a glass of chaach.
