Wash
the bitter gourds, peel and cut in half lengthwise, remove
the seeds and thinly slice them. Dissolve tamarind, salt and
turmeric in 4 cups of water in a bowl. Soak the bitter
gourds in this water and leave for half an hour. Then wash
them thoroughly in the same water, drain and set aside.
Meanwhile heat the oil in a deep saucepan. When the oil
becomes very hot, lower the heat and add sliced bitter
gourds and salt to the oil. Deep fry until they become pale
gold. Remove from the oil and spread on a sheet of absorbent
paper to drain excess oil. Now add the onions and fry till
they are alight golden. Immediately turn the heat off and
remove from the oil. Place onions on an absorbent sheet.
Just before serving, mix the bitter gourds and onions
together and sprinkle a little bit of chat masala over them.
