Fresh Onion Soup Recipe

Onions, chopped 2 cups

Butter 2 tbsp

Flour 11/2 tbsp

Bay leaf 1

Slices of bread, fried 2

Grated cheese 25 gm

Vegetable stock 6 cups

Salt to taste

  • Melt the butter in a saucepan, add the onions and simmer over low heat till they turn golden brown in colour. Stir in the flour and roast for a minute.

  • Then add the vegetable stock. Add the bay leaf and salt and cook, covered, over low heat for 20 minutes. Remove. Preheat the oven.

  • Cut the bread slices into small cubes. Arrange the cubes in a bowl and pour the onion soup over them. Top with the grated cheese. Grill for 15 minutes or till the cheese melts. Serve hot.
