bullet 1 kg sole fish fillets
bullet 2 tbsp tomato ketchup
bullet 1 tbsp cheddar cheese, grated
White Sauce
 
bullet Green Chutney (grind to a paste)
bullet 1/2 bunch fresh coriander
bullet 6 long green chillies
bullet Salt to taste
  • Grease a rectangular baking dish. Wash and dry fish thoroughly. Blot out water by wrapping fish in a clean towel.
  • This is important so that excess water does not accumulate during baking. Layer the dish as follows: fillets of fish, white sauce, ground green chutney, tomato ketchup, some more white sauce and sprinkle the top with grated cheese.
  • Bake at gas mark 3/160º C for 10-15 minutes only. Overbaking will spoil the fish.
  • Serve with fried grapes or fried raisin.

Cooking Time: 20 minutes
