beetroot, cooked, peeled and drained |
 |
1-1/2 cup boiled rice |
 |
4
oranges |
 |
Salt to taste |
 |
Black pepper to taste |
Dressing
 |
1/2 tsp orange rind, finely grated |
 |
1
garlic clove, crushed |
 |
1
tbsp mustard powder |
 |
2
tsp honey |
 |
4
tbsp yoghurt |

-
Slice the top and bottom off each orange. Remove the skin
and pith.

Holding the orange over a bowl, carefully slice the
segments.

Collect the juice in the bowl and leave to chill.

Place the segments in a separate bowl.

Dice the beetroot into small cubes, mix with the orange
segments and leave to chill.

In
a bowl mix rice with orange juice and season with salt and
pepper.

In
a salad plate spoon over rice and top with the beetroot and
orange mixture.

Mix all the dressing ingredients together and spoon over the
salad or serve separately in a bowl.
