In a
shallow saucepan heat oil and ghee together and stir-fry
chicken pieces on high heat till the chicken is well fried
and there is no liquid in the pan.
Then
turn down the heat and add the cumin seeds, coriander seeds
and green chillies. Stir for a few minutes. Add tomatoes and
all seasonings and continue to stir-fry on low heat.
Add 1/4
cup of water for gravy. Simmer until chicken is tender. Mix
the boiled rice lightly in chicken. Leave on low heat for 15
to 20 minutes, or till it is ready.
