Red Chilli Capsicum Rice Recipe

bullet Chicken, boneless cut into small pieces, 1/2 kg

Marinade

bullet Chilli garlic sauce 2 tbsp
bullet Hot chilli sauce 1 1/2 tbsp
bullet Chilli powder 1/2 tsp
bullet Salt to taste

Rice

bullet Basmati rice, boiled 3 cups
bullet Capsicums, finely chopped 3 large
bullet Cabbage, finely chopped 2 cups
bullet Spring onions, finely chopped 3
bullet Paprika powder 1 tsp
bullet Oil 4 tbsp
bullet Salt to taste
  • Combine marinade ingredients in a bowl, marinate the chicken for 30 minutes.
  • In a large shallow saucepan, heat oil and fry marinated chicken on high heat till chicken is cooked. Add all the vegetables and seasonings.
  • Mix well and fry on high heat. Add boiled rice and mix with chicken, stir gently till heated through.
  • Cover the pan and leave on low heat for 2 to 3 minutes.
