Masala Egg Rice |

Rice, boiled 3
cups |

Tomatoes,
finely chopped 2 medium |

Turmeric
powder 1/4 tsp |

Chilli powder
1/2 tsp |

Oil 3 tbsp |
Masala omlette
 |
Eggs, beaten 3

Green chillies,
finely chopped 2 |

Mint and
coriander leaves, 3 tbsp, finely chopped |

Onion, finely
chopped 1 large |

Oil 4 tbsp

Salt to taste |

- Mix all
the ingredients of omlette except oil and beat well. Heat
oil in a pan, pour in the egg mixture and make an omlette.
Fry both sides of omlette. Roll up the omlette and cut into
small pieces.
- Heat
oil in a large saucepan. Add tomatoes and fry on medium heat
till tomatoes are cooked. Add masala omlette, salt, chilli
powder and turmeric powder. Mix well. Add boiled rice.
- Stir
and cover the pan and leave on low heat for 3 - 5 minutes.
