bullet Rice, boiled 3 cups
bullet Tomatoes, finely chopped 2 medium
bullet Turmeric powder 1/4 tsp
bullet Chilli powder 1/2 tsp
bullet Oil 3 tbsp

Masala omlette

bullet Eggs, beaten 3
bullet Green chillies, finely chopped 2
bullet Mint and coriander leaves, 3 tbsp, finely chopped
bullet Onion, finely chopped 1 large
bullet Oil 4 tbsp
bullet Salt to taste
  • Mix all the ingredients of omlette except oil and beat well. Heat oil in a pan, pour in the egg mixture and make an omlette. Fry both sides of omlette. Roll up the omlette and cut into small pieces.
  • Heat oil in a large saucepan. Add tomatoes and fry on medium heat till tomatoes are cooked. Add masala omlette, salt, chilli powder and turmeric powder. Mix well. Add boiled rice.
  • Stir and cover the pan and leave on low heat for 3 - 5 minutes.
