Chicken Rice Pulao Recipe

Basmati rice,
boiled 2 1/2 teacups |
 |
Chicken, cut
into small pieces 1 kg |
 |
Ginger /
garlic paste 1 1/2 tsp |
 |
Green chillies,
finely chopped 5 |
 |
Spring onions,
finely chopped 3 |
 |
Capsicums,
finely chopped 4 medium |
 |
Yogurt, beaten
1 teacup |
 |
Oil 5 tbsp |
 |
Salt to taste |

- Heat
oil and fry chicken pieces until the liquid from chicken
evaporates. Add ginger/garlic paste, green chillies and
salt. Mix well, stirring continuously.
- Turn up
the heat, add all vegetables and fry, stirring for a few
seconds. Add beaten yogurt and mix well. Cook on low heat
for a few minutes.
- Add
some water and cover the saucepan. Simmer for 8 minutes on
low heat. Add the cooked chicken and gravy to the boiled
rice and mix gently.
- Cover
and leave on low heat for 6 minutes.
- Serve
hot with raita.
