bullet Chicken cut into 12 pieces 1 kg
bullet Onions, sliced 3 medium
bullet Tomatoes, finely chopped 4 medium
bullet Green chillies, finely chopped 9
bullet Kasuri methi, dried 1 1/2 tsp
bullet Ginger / garlic paste 4 tsp
bullet Turmeric powder 1/2 tsp
bullet Black pepper powder 1/2 tsp
bullet Garam masala powder 1 1/2 tsp
bullet Coriander powder 1 tsp
bullet Bay leaves 2
bullet Coriander and mint leaves, 3 tbsp, finely chopped
bullet Basmati rice 3 teacups
bullet Cumin seeds 1 tsp
bullet Green cardamoms 2
bullet Desi ghee / oil 8 tbsp
bullet Salt to taste

Garnish

bullet Onions, sliced 4 medium, fried
bullet Mint 6 tbsp
bullet Garam masala powder pinch
  • In a shallow saucepan, heat desi ghee / oil and fry chicken on high heat, till the liquid from chicken dries, then fry chicken on low heat till chicken turns a golden brown colour. Add ginger / garlic, salt, coriander, turmeric, black pepper, garam masala and mix well. Cook on low heat until chicken absorbs the spices. Remove chicken to a plate.
  • In the same desi ghee / oil, fry onion slices till golden brown in colour. Add tomatoes, green chillies and fry for a while till tomatoes become soft, add Kasuri methi.
  • Add fried chicken pieces, cook on high heat for a few minutes, then add some water to make gravy in chicken. Stir on medium heat for a while. Cover the pan with lid and simmer on low heat till oil rises to surface and chicken is tender. Add coriander and mint, mix well and remove from heat.
  • Boil rice in the usual manner, with cardamoms and cumin seeds.
  • In large dish put a thin layer of chicken, cover with boiled rice, sprinkle some garam masala, golden onions and mint leaves. Then put a thick layer of chicken followed by a layer of the remaining boiled rice, sprinkle all ingredients as above and pour very hot desi ghee over the biryani. Put in a microwave oven for 6-8 minutes on high temperature.
  • Serve hot with yogurt or raita.
