I wrote it down while the show was on so thought of sharing it here! Sorry for any mistakes...
ZAFARANI ANDE WALA PULAO (Saffron & Egg Rice)
Ingredients
1/2 kg rice 6 eggs (boiled) 1/2 kg potatoes 1/2 cup yogurt 1 large onion 2 cups chicken stock 6 green chilies 2 tomatoes 1-2 tsp salt 1 tsp garam masala 1 tsp saffron (zafran) 1 tbsp ginger/garlic paste 1 tbsp black pepper 1 cup oil
1. Fry cubed potatoes in oil until golden. 2. Slice onion and fry in oil & add garam masala/yogurt/ginger-garlic paste. 3. After 2-3 min, add chicken stock & salt. 4. When it starts to boil, add rice and a little bit of water and mix. 5. On top, put fried potatoes, sliced tomatoes, sliced green chilies, saffron & black pepper (Don't mix). Cover for 7-10 min on medium heat. 6. When water dries, uncover and mix rice. Cover again on low heat. 7. When serving, put sliced boiled eggs on top of rice.
CHICKEN KABABS WITH TOMATO SAUCE (DHUAYAN WALE KABAB)
Ingredients
1/2 kg Chicken/Beef 2 onions 1/2-1 cup mint & dhaniya 4 green chilies 1 tbsp ginger-garlic paste 1 tbsp black pepper 1 tsp salt 1 tsp garam masala 2 tbsp yogurt 1/2 cup besan 1 egg
For sauce/gravy:
1/2 kg tomatoes 1/2 tsp kaluanji 8 green chilies 1 tsp brown sugar 1/2 tsp salt
1. Fry tomatoes, kaluanji, salt & brown sugar in oil and cover (on low heat). When tomatoes are soft, add green chilies and a little bit of water. Cover again on low heat. 2. In boneless chicken, mix sliced onion, dhaniya, mint, ginger-garlic paste, red pepper, garam masala. 3. Put in chopper/blender and blend together. 4. Put mixture into a bowl. Add yogurt, egg & besan. Mix. 5. Make kababs out of the mixture and fry them. 6. Put kababs in plate and put tomato sauce on top. Garnish with mint leaves.
