1   INGREDIENTS

  • Milk 1/2 pint
  • Grated nutmeg 1 pinch
  • Flour 1 oz
  • Chopped parsley or coriander 1/4 tsp
  • Butter 1 tbsp
  • Boiled rice 2 oz
  • White breadcrumbs
  • Hard boiled eggs 4
  • Green chillies 2
  • Egg 1
  • Salt and pepper to taste

2   COOKING DIRECTIONS

  1. Melt butter in a saucepan.
  2. Add flour and cook, stirring constantly, for a few seconds.
  3. Add milk, stir well and boil for 5 minutes.
  4. Add rice, chopped eggs, chopped green chilies, nutmeg, parsley and breadcrumbs. Mix well.
  5. Spread on a floured platter and let cool.
  6. Then divide into equal portions and shape into cutlets.
  7. Coat in egg and breadcrumbs and deep fry in hot fat.
  8. Drain well on kitchen paper or newspaper and serve with tomato puree or chutney.
