1   INGREDIENTS

  • Beckti, rohu or similar fish such as haddock 1 (1 lb)
  • Fresh coriander leaves 1 lb
  • Sour curd or yogurt 1 pint
  • Green chilies 10
  • Banana leaf 1 large
  • Salt to taste

2   COOKING DIRECTIONS

  1. Clean the fish by slitting lengthwise along the top and belly, removing the bone between the base of the head and the tail, leaving these intact.
  2. Scrape off the scales carefully.
  3. Grind and make a paste of the green chilies and coriander leaves.
  4. Whip the curd slightly and mix with this paste. Add the salt.
  5. Meanwhile, in a large pan heat some water and allow it to boil.
  6. Cover the fish carefully, inside and out, with the paste.
  7. Wrap it securely in the banana leaf.
  8. Put in a smaller pan than the one in which the water is boiling.
  9. Place the smaller pan in the larger, making sure that the water will not seep into the fish.
  10. Cover tightly and put a weight on the lid.
  11. Steam for about 20 minutes.
  12. Test with a knife and when the skin becomes flaky, the fish is ready.
  13. Serve garnished with lemon slices and springs of coriander.
