1   INGREDIENTS

  • Basmati rice 1/4 kg
  • Khoya 1/4 kg
  • Sugar 1/4 kg
  • Cloves 5-6
  • Ghee 1/4 kg
  • Blanched, sliced almonds 100 gms
  • Cardamoms (powdered) 1 tsp
  • Raisins 100 gms
  • Silver varkh

2   COOKING DIRECTIONS

  1. Clean and boil the rice in water till half done.
  2. Drain off water and cool rice.
  3. Heat half the ghee and fry the cloves.
  4. Mix together, sugar and khoya till no lumps remain.
  5. Add the boiled rice to this and mix well.
  6. Add the rice¬khoya mixture to the ghee and cook covered,
  7. over a very low flame, stirring continuously.
  8. Cook till the mixture becomes golden brown.
  9. Add roasted almonds and sprinkle cardamom.
  10. Pour into a rice dish and decorate with varkh.
