1   INGREDIENTS

  • Basic ingredients
  • From the Swiss Tart recipe and others)
  • Flour sift into a big bowl 200 g
  • Salted soft butter add and rub into flour 100 g
  • with fingers until mixture looks like breadcrumbs
  • Fine sugar add and mix 3 tsp
  • Small egg, beat slightly 1
  • Cream add 1 tsp

2   COOKING DIRECTIONS

  1. Rub butter and flour with finger-tips until it looks like bread-crumbs.

  2. Press dough together into a ball.
  3. Cover with a damp cloth.

  4. For a Pie Dish:

  5. Roll out dough on a flour­dusted surface. Fold it into half and then into a quarter, place it into the dish and then unfold it again.
  6. Trim off overlapping dough with the rolling pin and fit into the pie dish.
  7. Place the base on a cloth or a towel to prevent it from slipping. Put the dough on the base and cover with a plastic foil.
  8. Go over the dough with the rolling pin, remove plastic and cut off the edge.
  9. Make a roll of the remaining dough, place it around the inner side of the rim and pull it up with fingertips to make an edge.
  10. When blind-baking, cover dough with aluminum foil or a butter paper and fill with beans or rice.
