Bean Sprout with Capsicum and Vegetables

1   INGREDIENTS

  • Bean sprout 1 cup
  • Cornflour 1 tbsp
  • Red chillies 2
  • Green pepper, diced 1
  • Flakes garlic, crushed 3
  • Ginger, crushed 1" piece
  • Soya sauce 1/2 tbsp
  • Sugar 1/4 tsp
  • Spring onion, chopped 1
  • Carrot, cut lengthwise 1/2 cup
  • Beans, cut lengthwise 1/4 cup
  • Ajinomoto 1/2 tsp
  • Small onion, chopped 1
  • Oil for cooking 4 tsp
  • Almonds, roughly chopped 2 tbsp
  • Salt and pepper to taste

2   COOKING DIRECTIONS

  1. Mix the bean sprouts with the cornflour and salt and pepper. Keep aside.
  2. Heat half the oil in a pan and fry the almonds over medium heat, then remove onto a plate.
  3. Add the carrots, beans and capsicum to the oil left in the pan and cook for one minute.
  4. Remove from the heat.
  5. Heat the remaining oil, add the garlic, onion, ginger, chillies and bean sprouts and fry for one minute.
  6. Then add the cooked vegetables and mix well.
  7. Now add the soya sauce, sugar, spring onion and ajinomoto.
  8. Cook for one minute, then stir in the fried almonds.
  9. Serve hot.
