Firni - The innovation of popular traditional dessert, kheer. Firni cooks quickly and tastes very near to kheer. Firni is made of rice flour and rice flour doesn't take long to cook and form pudding.

  • Milk 1 liter
  • Basmati rice (washed) 50 gm
  • Sugar(approx 12 tsp) or to taste
  • Cardamom (ground) 1/4 tsp
  • Rose water 2 tbsp
  • Pistachio cut into thin slices
  • Almonds cut into thin slices
  • Silver leaves (optional) for garnishing

Cooking Directions

  1. Heat the milk and when it boils add the rice powder stirring continuously till it become medium thick.

  2. Put sugar, cardamom and allow it to cool.

  3. Then add rose water and put it in refrigerator till it cools (1 to 1, 1/2 hours).

  4. Serve chilled with a dash of pistachios, almonds and silver leaf.

  5. To get a better taste serve in chippas ( flat earthen dishes).
