1   INGREDIENTS

  • Green tomatoes. Cut into big pieces 1/2 kg
  • Oil 1/4 cup / 50 ml
  • Cumin seeds (jeera) 1/2 tsp / 3 gm
  • Fenugreek seeds (methi dana) 1/2 tsp / 3 gm
  • Green chillies, sit 2-3
  • Red chilli powder 1 tsp / 5 gm
  • Coriander (dhaniya) powder 2 tsp / 10 gm
  • Turmeric (haldi) powder 1/2 tsp / 3 gm
  • Salt to taste
  • Mango powder (amchur) 1/2 tsp / 3 gm
  • Sugar a pinch
  • Garlic (lasan) paste 1 tsp / 5 gm

2   COOKING DIRECTIONS

  1. Heat the oil in a wok (kadhai).
  2. Sauté the cumin and fenugreek seeds, when they crackle, add the tomatoes and green chillies.
  3. Fry for 1-2 minutes.
  4. Add all the dry spices and sugar.
  5. Cook covered for 5-6 minutes, or till the tomato slices lose their shape.
  6. Add the garlic paste and stir-fry for 2-3 minutes.
  7. Serve hot with missi roti and a glass of chaach.
