1   INGREDIENTS

  • Minced meat 2 lb
  • Black pepper 2 tsp
  • Ginger 2 inch piece
  • Cloves 1 dozen
  • Green chillies 12 (or to taste)
  • Turmeric powder 1 tsp
  • Coriander leaves 1 bunch
  • Ghee or butter
  • Onions 2
  • Curd or yoghurt 1 pint
  • Salt to taste

2   COOKING DIRECTIONS

  1. Grind the meat on a curry stone or use a mincing machine with an extremely fine blade.
  2. Mince the ginger and squeeze out the juice.
  3. Chops fine the chilies and coriander leaves.
  4. Slice onions and fry in 2 tbsp ghee to a golden brown.
  5. Tie the curd in a piece of muslin and drain out the liquid.
  6. Mix the ginger juice into the meat.
  7. Add curd, pepper, salt, powdered cloves, turmeric, coriander, chilies and browned onions. Mix well and marinate for 2 1/2 hours.
  8. Make small balls of the meat mixture and pass the skewers through them.
  9. Dip in melted butter or ghee and grill over an open fire or under a grill till done on all sides.
  10. Serve with onion rings and lemon slices.
