- Pomfrets or plaice 3 medium sized

Chili powder 4 tbsp

Turmeric powder 2 tbsp

Ginger 1 1/2 inch piece

Garlic 1 small pod

Vinegar 2 pints

Pure mustard oil 1 pint

Wheat flour a little

Salt to taste

- Cut the fish into small bits and remove the bones.

To clean it thoroughly, wash well with a little wheat flour.

Apply the turmeric, salt and a little vinegar to the fish and marinate for an hour.

Fry the pieces of fish in smoking oil.

Dry the pieces of fish in the hot sun for 4 hours, or in a warm oven. Grind chilli powder, garlic and ginger in a little vinegar.

Heat the oil in saucepan. When it begins to smoke.

Put in the ground spices and fry stirring continuously for a few minutes.

Put the prepared fish into this and add the rest of the vinegar.

Let it boil for a while longer.

Cool and preserve in an airtight jar.
