1   INGREDIENTS

  • Pomfrets or plaice 3 medium sized
  • Chili powder 4 tbsp
  • Turmeric powder 2 tbsp
  • Ginger 1 1/2 inch piece
  • Garlic 1 small pod
  • Vinegar 2 pints
  • Pure mustard oil 1 pint
  • Wheat flour a little
  • Salt to taste

2   COOKING DIRECTIONS

  1. Cut the fish into small bits and remove the bones.
  2. To clean it thoroughly, wash well with a little wheat flour.
  3. Apply the turmeric, salt and a little vinegar to the fish and marinate for an hour.
  4. Fry the pieces of fish in smoking oil.
  5. Dry the pieces of fish in the hot sun for 4 hours, or in a warm oven. Grind chilli powder, garlic and ginger in a little vinegar.
  6. Heat the oil in saucepan. When it begins to smoke.
  7. Put in the ground spices and fry stirring continuously for a few minutes.
  8. Put the prepared fish into this and add the rest of the vinegar.
  9. Let it boil for a while longer.
  10. Cool and preserve in an airtight jar.
