1   INGREDIENTS

  • Meat 1 lb
  • Tomatoes 2 large
  • Ginger 1 large piece
  • Potatoes 2 large
  • Onions 1/2 lb pearl
  • Tamarind juice
  • Green chillies or red peppers 6
  • Garlic 1 pod
  • Large onion 1
  • Ghee
  • Salt to taste
  • Grind to a fine paste:
  • Red chillies 3
  • Raw rice or poppy seeds 2 tbsp
  • Ginger 1 piece
  • Garlic 4-6 cloves
  • Cinnamon 1 stick
  • Coriander 1 tsp
  • Cloves 2-3
  • Cumin seeds 1/4 tsp
  • Cardamoms 2-3
  • Turmeric 1 small piece

2   COOKING DIRECTIONS

  1. Wash the meat and cut it into cubes.
  2. Slice the ginger. Peel the onions.
  3. Halve the garlic and cut the chilies into 1/2 inch pieces.
  4. On a toothpick, skewer a piece of meat, a slice of ginger,
  5. pieces of garlic and chili and a pearl onion.
  6. Repeat the process till all the meat is exhausted.
  7. Heat 1 tbsp ghee in a saucepan and brown 1 sliced onion in it.
  8. Add the chopped tomatoes and cool till soft.
  9. Stir in the ground masala and cook till ghee floats on top.
  10. Put in the kababs, and stir with a fork till they are well
  11. coated with masala. Add salt to taste and sufficient water
  12. to cook the meat. When the meat is nearly done, quarter
  13. the potatoes and add.Let the curry simmer on a low heat
  14. till meat and potatoes are tender.Add the tamarind juice.
  15. Boil for a couple of minute. Then take off the heat.
  16. Serve hot, garnished with chopped coriander and halved hardboiled eggs.

  1. after the meat pieces are skewered on the toothpick are they have to be fried and is the meat boneless?
