1   INGREDIENTS

  • Milk 1 litre
  • Cardamom, crushed 1
  • Pistachios, blanched and sliced 1 tsp
  • Saffron a few strands
  • Sugar 180 gm

2   COOKING DIRECTIONS

  1. Put milk and sugar into a large heavy bottomed pan and boil until reduced to a third and mixture is thick and creamy.

  2. Add cardamom, pistachio slices and saffron.
  3. Cook for 5 minutes. Cool to room temperature.
  4. Spoon the mixture into 4 moulds.
  5. Tightly cover the moulds with foil and freeze overnight.

  6. To Serve, wrap moulds in a warm towel for 5 minutes then invert onto individual serving plates.
