  • For the Chipotle-Mango BBQ Sauce:
  • Mango 1 (chopped)
  • Chipotle pepper 1
  • Adobo sauce 2 tsp
  • Ketchup 1/2 cup
  • Apple juice 1/2 cup
  • Onion 1/4 (chopped)
  • Garlic 4 cloves (smashed)
  • Juice from half lemon
  • Unseasoned rice vinegar 2 tsp
  • Brown sugar 2 tsp
  • Canola oil 1 tsp
  • Paprika 2 tsp
  • Salt 2 tsp
  • Black pepper 1 tsp
  • For Dressing And Salad:
  • Plain Greek yogurt 2 tsp
  • Chicken breasts 2
  • Ears sweet corn 2 (shucked)
  • Vine-ripened tomato 1 (cut into cubes)
  • Cilantro 1/4 cup (chopped)
  • Dole Romaine Salad mix 1 bag

Cooking Directions

  1. For the Sauce: Mix mango, chipotle pepper, adobo sauce, ketchup, apple juice, onion, garlic, lemon juice, unseasoned rice vinegar, brown sugar, canola oil, paprika, salt, black pepper into saucepan and boil over a medium heat for 15-20 minutes. Let it cool then put into blender and process until smooth.

  2. For Dressing: Mix prepared sauce, plain Greek yogurt. Then taste it and add more lime juice, salt and pepper if necessary.

  3. For the Salad: Marinate chicken breast into prepared sauce for at least 15 minutes or up to 3 hours. Then grill it over a medium-high heat for 5-6 minutes per side. Before slicing, remove it from the grill at least for 5 minutes. Grill corn along with the chicken, turn it every few minutes until cooked on all sides. Let it cool for a few minutes, and then slice kernels off the cob.

  4. Divide lettuce into plates, and then top with the grilled corn, tomatoes, cilantro and chicken. Drizzle with prepared dressing.

  5. Ready to serve.
