Sindhi Kadhi is nothing like our typical kadhi. Its main ingredients are yellow lentils and vegetables. And I'm sure you will love it just the same. Serve hot with rice.

Ingredients

  • Split white lentils (urad dal) 1 cup
  • Gram flour 1/4 cup
  • Tamarind soaked in a cup of water 1/4 cup
  • Ladyfinger 8
  • Medium-sized brinjals 2
  • Guars 8-10
  • Ginger A little
  • Mint and coriander leaves few
  • Green chillies (cut finely) 2
  • Cumin seeds 1 tsp
  • Turmeric powder 1/2 tsp
  • Salt to taste
  • Curd 1/2

Cooking Directions

  1. First cook the lentils in pressure cooker.

  2. Heat 1 tbsp ghee and add the dry spices, then add the other ingredients.

  3. When slightly brownish, add the brinjals (cut lengthwise), five guars (chopped in half) and ladyfinger (cut into half).

  4. Mix the gram flour with a little water and 1/2 cup curd.

  5. Add this to the vegetables and put in the lentils.

  6. Cook till vegetables are tender, then add the tamarind water in the end.

  7. Garnish with coriander leaves.
