  • Basmati rice(washed & soaked in water) 1 kg
  • Mixed vegetables:
  • Beans, peas, potatoes(cut into small pieces) 500 gms
  • Tomatoes & cauliflower(cut into small pieces) 500 gms
  • Curd(beaten) 1 cup
  • Onions(finley sliced) 2 medium size
  • Ginger-garlic paste 2 tbsp
  • Turmeric powder 1/2 tsp
  • Red chilli powder 1 tsp
  • Green chillies(cut into small pieces) 4-5
  • Coriander leaves(finely cut) 1/2 cup
  • Mint leaves(whole) 1 tsp
  • Vegetable oil 1/2 cup
  • Ghee 8-10 tbsp
  • Cashew(roasted & fried) 150 gms
  • Lime juice 4-5 tbsp
  • Salt to taste

Cooking Directions

  1. To make the vegetable korma:

  2. Heat oil in a pan. Add half the garam masala and onions.

  3. Fry onions till golden brown.

  4. Add ginger-garlic paste, turmeric powder, chilli powder and salt.

  5. After lowering the heat add the vegetables, fry a little and then add curd.

  6. Cook till the vegetables are done. Keep aside.

  7. In another vessel put water to boil, adding garam masala and 2 tbsp salt.

  8. When water boils add the rice.

  9. When three fourth cooked drain out the rice in a strainer.

  10. In another bigger vessel spread half the ghee at the bottom.

  11. Pour half the quantity of rice spreading it uniformly and over it.

  12. Put the vegetable curry, lime juice, half coriander and mint leaves, green chillis and then spread the rest of the rice over it.

  13. Put the left over corainder, mint leaves, green chillis and ghee.

  14. Cover the vessel with an aluminum foil and a lid.

  15. Put it on medium flame for 12 to 15 minutes.

  16. Serve after through mixing and garnishing with cashews.
