Ingredients

  • Chicken mince 1/2 kg, ground fine
  • Onions 2 small, finely chopped
  • Red chillies 1/2 tbsp, powdered
  • Peppercorns 6 whole
  • Cloves 4
  • Cardamoms 6
  • Kabab Cheeni 4
  • Grams (chana) 1 tbsp, roasted and peeled
  • Fresh coriander 1 bunch, finely chopped
  • Green chillies 4, finely chopped
  • Khush khush 1 tbsp
  • Bread slices 3, cut edges and grind into crumbs
  • Corn flour 1 tbsp
  • Egg 1 beaten
  • Salt to taste
  • Oil as needed

Cooking Directions

  1. Grind all dry ingredients together, add to mince along with breadcrumbs and put through the grinder again.

  2. Add the egg, corn flour, green chillies and fresh coriander, mix thoroughly and leave for half an hour.

  3. Make seekh kabab by molding some mince around a skewer about 4 inches in length.

  4. Barbeque on a gas stove and brush with a little oil.

  5. Serve hot with tamarind chutney, raita and naan.

  1. kebab cheeni is allspice (berries I'm assuming) at least that is what wikapedia says just clarifying since I'm American and had no idea...

  2. Sameena, make sure you use very finely ground mince. Don't wash the mince. There is no moisture in the mince. Use an egg or two for binding.

  5. no it is Kabab cheeni only . its like small black pepper but with a small tail too. ask the People selling masalas.

  6. seems to me that kabab cheeni should be written as daal cheeni (cinnamon). Recipe looks fine. I will try and give you my opinion.
