Green Chicken Biryani - Popularly known as "Hara Masala Chicken Biryani". Chef's Zakir's recipe of green chicken biryani has peas in it to bring in a richer green color and flavor.

Ingredients

  • Chicken 1/2 kg
  • Rice 1/2 kg
  • Coriander 1/2 bunch
  • Mint 1/2 bunch
  • Yogurt 250 gm
  • Green chilies 250 gm
  • Onions 2
  • Clarified butter 1 cup
  • Peas 1 cup
  • Dried plums 100
  • All spices as required
  • Mace and nutmeg powder 1 tsp
  • Cardamom powder 1/2 tsp
  • Ginger garlic paste 2 tbsp
  • Kewra 2 tbsp
  • Salt as required

Cooking Directions

  1. In a pan, heat 1/2 cup clarified butter and fry onions till they turn golden brown, and take out half onions out of the pan.

  2. In remaining onions, add ginger garlic paste, chicken, salt and all spices.

  3. Cook on medium heat.

  4. Soak rice for half an hour.

  5. Chop coriander, mint and green chilies in a chopper.

  6. When chicken color turns white, add the chopped mixture and peas in it.

  7. Boil rice in a separate pan till half done, then take out in a strainer.

  8. When chicken is properly cooked, turn off the heat.

  9. Now layer the rice and chicken for biryani, starting with a layer of half of chicken gravy, topped with half of rice, add a layer of yogurt, mace and nutmeg powder, cardamom powder, rest of the golden brown onions, dried plums and kewra.

  10. Put a layer of remaining chicken gravy over it, followed by rice.

  11. Pour rest of the clarified butter on rice.

  12. Cover with lid and cook on a very low flame, for 10 to 12 minutes.

  13. Delicious Green Chicken Biryani is ready.
