The pumpkin is cooked in a sweet and sour seasoning of tamarind pulp and jaggery and result in a exceptionally delicious sweet and sour pumpkin dish.

  • Pumpkin (kaddu), peeled, cut into cubes 1 kg
  • Ghee 1 tbsp
  • Bay leaf (tej patta) 1
  • Cumin (jeera) seeds 1 tsp
  • Coriander (dhaniya) seeds 1 tsp
  • Fenugreek seeds (methi dana) 1 tsp
  • Fennel (moti saunf), powdered 1 tsp
  • Onion seeds (kalonji) 1/2 tsp
  • Asafoetida (hing) a pinch
  • Ginger (adrak) paste 1" piece
  • Turmeric (haldi) powder 1/2 tsp
  • Dry red chillies (sookhi lal mirch) 2
  • Salt to taste
  • Coriander (daniya) powder 2 tsp
  • Jaggery (gur) a small lump
  • Tamarind (imli) pulp 2 tbsp
  • All-spice 1 tsp
  • Green chillies 2-3
  • Green coriander (hara dhaniya) 2 tbsp

Cooking Directions

  1. Heat the ghee in a pan, add the next seven ingredients and saute for 1 minute.

  2. Add the ginger paste and pumpkin, stir-fry for another 2 minutes.

  3. Mix in the turmeric powder, dry red chillies, and salt.

  4. Add coriander powder and cook covered, on low heat, for 15 minutes or till half done.

  5. Add jaggery, tamarind juice, all-spice, and green chillies.

  6. Cover and cook, on low heat, till done.

  7. Garnish with green coriander and serve.
