  • Lemons 1kg
  • Cumin (grounded) 3 tbsp
  • Salt to taste
  • Red chili (grounded) 4 tsp
  • Sugar 1, 1/4 cup

Cooking Directions

  1. The lemons: Wash, pat dry and make deep cross-cuts (for stuffing masala) on each.

  2. The masala: Mix cumin, salt and red chilies in a bowl.

  3. The stuffing: Fill the cross-cut incisions in the lemons with the masala and transfer to a sterilized earthenware or glass jar.

  4. Pour the remaining masala on top and secure muslin around the opening of the jar.

  5. Maturing: Keep the jar in the sun or in a warm place for 5 days.

  6. On the sixth day, uncover the jar and sprinkle the pickle with sugar, shake the jar well, secure it again and keep in the sun or in a warm place for another 5 days.

  7. Remove the muslin and cover with a lid.
