It is super duper and never fails hit cake without oil, butter, or ghee with a tremendous flavor. I am also sharing the best way to beating the cream.

  • For Cake Sponge:
  • Extra large eggs 6
  • Sugar 3/4 cup
  • All purpose flour 1 cup
  • Baking powder 1 tbsp
  • Cocoa powder (unsweetened) 3.5 tbsp
  • Vanilla essence 1 tsp
  • Cherries (fresh or canned)
  • Canned pineapple chunks (optional)
  • Chocolate shaving for the decoration
  • Cake Frosting:
  • Whipped cream 3 cups
  • Powder sugar 4 tbsp
  • Vanilla essence 1 tsp

Cooking Directions

  1. First beat eggs and sugar together until mixture comes fluffy and creamy in texture and double in amount. It will take 10 to 12 minutes with electric mixer.

  2. While in other bowl mix all dry ingredients and sift them.

  3. When eggs mixer is done add vanilla and mix it for few seconds then slowly put in 1 tbsp dry ingredients at a time and allow it to mix, continue adding the dry ingredients 1 tbsp at a time and mix it well.

  4. Pour bake mixture in the 8 inches round pan.

  5. Preheat the oven for 20 minutes at 200C, bring oven temperature down to 375 F or 190C and bake it for 25 to 30 minutes or the tooth pick comes out clean.

  6. Let it cool completely and then frost the cake.

  7. Cake Frosting: First put your bowl and whisk in the freezer for 20 to 30 minutes before you start whipping the cream. Cream should be chilled in the fridge not in the freezer. It will help to whip the cream soon.

  8. Now start beating the cream when it starts thicken then add sugar and beat it until soft peaks and then add vanilla. After that be careful don’t whisk it for long time just beat it until it start becoming stiff peaks and stop the beater and mix it for 2 to 3 time with hand whisk, it will prevent to curdle your cream.

  9. If unfortunately it happens than add little bit more cream and beat it for few seconds and cover cake with cream and decorate your cake with cherries and pineapple chunks and enjoy super duper delicious soft and spongy cake.
