Egg Fried Rice - A simple and delicious side dish. Richly flavored egg fried rice. Serve it with Chinese curries or fried fish, prawns or chicken. A great companion of barbecue.

  • Soya sauce 4-6 tbsp
  • Spring onion 4-5
  • Crushed ginger 1 tsp
  • Crushed garlic 1 tsp
  • Eggs 4
  • Boiled Rice 1/2 kg
  • Salt as per taste
  • White pepper 1–2 tsp
  • Yellow food color a few drops
  • Chicken stock 1 cup
  • Oil as required

Cooking Directions

  1. Take 1/4 cup chicken stock or water and add yellow food color, 1 tbsp oil, salt and white pepper in it.

  2. Now whisk 4 eggs in this water.

  3. Fry the egg mixture like an omelet, then crumble the fried egg.

  4. Saute’ ginger and garlic in a pan.

  5. Add in soya sauce, white pepper, remaining chicken stock and cook for a min.

  6. Add boiled rice and mix well.

  7. Cover and cook for a while.

  8. Add spring onion (only green part) and crumbled eggs and cook on low flame for 5 min.

  9. Now take out in a platter and serve hot with chicken shashlik.
