  • Cucumbers 4 (de seeded)
  • Chicken boneless 300g (cubed)
  • Prawns 250g
  • Oil 3 tbsp
  • Onion 1 (chopped)
  • Ginger 1 tbsp (finely chopped)
  • Soya sauce 2 tsp + ½ cup
  • Salt to taste
  • Brown sugar 1 tsp
  • Vinegar 2 tbsp
  • Corn flour 2 tbsp
  • Spring onions 2-3 (chopped)
  • Mozzarella cheese ½ cup
  • Butter for greasing
  • Oyster sauce 3 tbsp

Cooking Directions

  1. Heat oil in a wok on high flame and sauté the onions in it until they become transparent.

  2. Now add ginger and fry for a minute.

  3. Then add chicken, 2 tsp soya sauce, a pinch of salt, brown sugar, vinegar and mix properly.

  4. When the colour of the chicken and prawns begins to change, add 1 tbsp of corn flour dissolved in a little water and and stir fry for a minute.

  5. Now add the spring onions, mix and turn the stove off.

  6. Chop the cooked mixture in the chopper with mozzarella cheese leaving some for garnishing.

  7. Now stuff the hollow cucumbers with the prepared paste.

  8. Bake in a preheated oven on a greased oven tray for 10 to 15 minutes on 200°C.

  9. Take 1 cup water, ½ cup soya sauce, and oyster sauce in a pan and bring to boil.

  10. Dissolved 1 tbsp of corn flour in a little water and add it to the pan and cook for a few minutes.

  11. When the stuffed cucumbers are baked, remove from oven and cut them in smaller pieces.

  12. Garnish with the remaining mozzarella cheese and the prepared sauce.

  13. Serve hot.
