Ingredients

  • Mutton (1,1/2" cubes) 1 kg
  • Ginger (julienne) 100 gm
  • Garlic (finely sliced) 100 gm
  • Tomatoes (skinned and blended) 3/4 kg
  • Large green chillies (chopped) 125 gm
  • Spring onions (chopped) 3
  • Ghee 100 gm
  • Coriander leaves (chopped) 1 bunch
  • Ginger-garlic paste 1 tsp
  • Salt to taste

Cooking Directions

  1. Boil mutton with salt, ginger and garlic paste.

  2. When water dries, add ghee and fry a little, add a glass or two of water and cook till the meat is three fourth cooked.

  3. Heat oil put in garlic and ginger and fry a little till it gives off an aroma of the garlic, and add green chillies, spring onions and a little salt and fry a little more.

  4. Add the mutton pieces, fry for another 5-10 minutes.

  5. Add blended tomatoes, fry on high heat till water from tomatoes dries and a little gravy is left.

  6. Finally add coriander leaves and fry for a minute so.

  7. Serve hot with tandoori roti.
