  • Bottle gourd 1 kg
  • Sugar 1/2 cup
  • Sugar 100 gm
  • Reduced milk (Khoya) 250 gm
  • Semolina 1 tbsp
  • Almonds and pistachio sliced 1 tbsp each
  • Saffron 1/4 tsp
  • Green food color (powder) 1/4 tsp
  • Green cardamom powder 1/2 tsp

Cooking Directions

  1. Peel bottle gourd and grate it.

  2. Fill a pan with water and add green color and grated bottle gourd to it and boil for 10 minutes.

  3. Drain, cool and add sugar, mix well.

  4. Cook khoya in a wok on very low heat.

  5. Keep stirring constantly for about 10 minutes.

  6. Now add semolina and immediately remove from heat, cool completely.

  7. In another pan add boiled bottle gourd with 1/2 cup sugar.

  8. Cook on low heat while stirring.

  9. Then add saffron and cardamom powder.

  10. Add in the khoya mixture, mix well.

  11. Pour the mixture in a greased tray and level it.

  12. Sprinkle almonds and pistachio on top.

  13. Refrigerate, cut into pieces and serve.
