  • Pomfret or plaice 1 large
  • Tomatoes 2 ripe
  • For stuffing:
  • Onions 2 large
  • Green chillies 1
  • Coriander leaves a small bunch
  • Ripe tomato 1 large
  • Turmeric powder a pinch
  • Melted jaggery 1 tsp
  • Water ½ pint
  • Salt and lemon juice to taste
  • Ghee

Cooking Directions

  1. Clean the pomfret and make a slit in one side.

  2. Wash thoroughly and rub all over with salt.

  3. Then prepare the stuffing.

  4. Chop the onions, chili, fresh coriander and tomato finely.

  5. Heat a little ghee in a pan, put in the turmeric.

  6. Then add chopped chili and coriander and fry for a while put in onions, frying them till brownish.

  7. Add tomato, jaggery, water, salt and lemon juice to taste.

  8. Cook until the mixture thickens and all the liquid is absorbed.

  9. Then wipe the fish dry and pack the stuffing in.

  10. place fish on a greased pie dish or baking tin and arrange slices of tomato on and around it.

  11. Bake in a moderate oven until cooked, reckoning 12 minutes cooking time to each lb. of fish.
