Ingredients

  • Mutton ½ kg
  • Rice ½ kg
  • Yogurt 2 cups
  • Coriander and mint 1 cup
  • Bay leaf 1
  • Black cardamom 2
  • Green cardamom 6
  • Cinnamon 2pieces
  • Cloves 4
  • Cumin seeds 2 tsp
  • Cashew nuts 3 tbsp (fried)
  • Coriander powder 2 tsp
  • Red chili powder 2 tsp
  • All spice mix powder 1 ½ tsp
  • Turmeric 1 tsp
  • Nutmeg ½ tsp
  • Saffron ½ tsp
  • Ghee 1 cup

Cooking Directions

  1. In mutton add red chili powder, yogurt, salt and turmeric, leave it for 1 hour.

  2. Take another pan heat the ghee and add cloves, black cardamom, cinnamon, bay leaves cumin seeds, coriander powder, nutmeg, all spice mix and add mutton cover it and cook.

  3. Boil rice with salt bay leaf and green cardamom, drain and separate in two portions.

  4. In one portion add milk and saffron mixture.

  5. First layer plain rice and add mutton mixture and on the top layer the saffron mixed rice along with cashew nuts.

  6. Then sprinkle mint and coriander on to it.

  7. Simmer the rice for 15 minutes.
