  • 4 eggs
  • 1 onion finely chopped
  • 2 green chillies finely chopped
  • 2 green chillies slit
  • 1/2 tsp ginger paste
  • 1/2 tsp garlic paste
  • A pinch of turmeric powder
  • A pinch of red chilli powder
  • A few sprigs of fresh green coriander, choppe
  • A few mint leaves
  • 2 tbsp oil
  • Salt to taste

Cooking Directions

  1. Heat the oil in a frying pan. Put in the onions and fry till golden brown.

  2. Add the whole green chillies, salt, turmeric powder and the red chilli powder.

  3. Add the ginger, garlic paste and fry for two minutes.

  4. Add the chopped green chillies, coriander, mint and the well-beaten egg and stir briskly, till the eggs are well done.
