Ingredients

  • Fish 2 lb
  • Coconut 1
  • Onions 4 medium
  • Cloves garlic 12
  • Ginger 1 1/2 inch piece
  • Curry leaves (cassia leaf) 2
  • Green chilies 4
  • Ghee 4 tbsp
  • Salt a pinch
  • Coriander leaves a few

Cooking Directions

  1. To make the coconut cream, grate the coconut, and then grind it.

  2. Then extract the milk. Grind the coconut once again and extract more milk.

  3. Strain the milk through a fine muslin (including coconut water, if any).

  4. Grind the onions, garlic and ginger to a fine paste.

  5. Clean and cut the fish into fairly large, flat pieces.

  6. Warm the ghee in a flat utensil. Add the curry leaves and fry till brown.

  7. Put in the ground spices and fry, stirring from time to time.

  8. Add the fish and turn the pieces after a minute or so, mixing them carefully with the spices.

  9. Stir in the coconut milk. The gravy should cover the fish completely.

  10. Put in the green chilies and coriander.

  11. Cover with a tight fitting lid and put a weight on it.

  12. After 5 minutes uncover, add salt to taste and turn the fish.

  13. Leave it for another 10 minutes or until the fish is done and the gravy thickens.

  14. When serving, remove the curry leaves and garnish with coriander leaves.
