Dum ka Gosht (Steam meat) is a recipe that you can make with Eid’s meat because if meat is cooked in steam it diminishes out its smell making it exclusively delicious. Serve out with nan or roti to enjoy its aroma.

Ingredients

  • Mutton ½ kg
  • Yogurt 1 cup
  • Raw papaya 1 tsp heaped (grinded)
  • Allspice 1 tsp
  • Coriander powder 1 tsp
  • Chili powder 1 tsp
  • Ginger garlic paste 1 tbsp
  • Turmeric ¼ tsp
  • Salt to taste
  • Lemon juice 2 tbsp
  • Desiccated coconut 1 tsp (grinded)
  • Nutmeg ¼ tsp (grinded)
  • Cumin seeds 1 tsp
  • Almonds 6 (grounded)
  • Poppy seeds 1 tsp (grinded)
  • Sesame seeds 1 tsp (grinded)
  • Oil ½ cup
  • Brown onion ½ cup
  • Coriander leaves 2 tbsp (chopped)
  • Mint leaves 1 tbsp (chopped)
  • Spring onion 1 tbsp (chopped)

Cooking Directions

  1. Marinate mutton with yogurt, papaya, allspice, coriander powder, chili powder, ginger garlic paste, turmeric, salt, lemon juice, coconut, nutmeg, cumin seed, almond, poppy seeds and sesame seeds.

  2. Leave it for 2 hours.

  3. Heat oil add brown onion with marinated mutton, cook till soft.

  4. When oil comes on top give simmer of coal.

  5. Garnish with chopped coriander leaves, mint leaves and spring onion.

  6. Serve hot with roti.
