  • Trotters 12
  • Green coriander 1 bunch (chopped)
  • Yogurt 1 cup
  • Small onion 2
  • Lemon juice 3 tsp
  • Green chilies 4 (chopped)
  • Turmeric 2 tbsp
  • All spice powder 1 tbsp
  • Cumin powder 1 tbsp (roasted)
  • Red chili powder 2 tbsp
  • Ginger garlic paste 3 tbsp
  • Coriander powder 2 tbsp
  • Oil 1 1/2 cup
  • Ginger as required (chopped)
  • Salt to taste
  • For washing:
  • Flour ½ cup
  • For tender:
  • Whole garlic 2
  • Water 4 to 5 glass
  • Aniseed 1 tsp
  • Whole coriander 1 tbsp
  • Salt to taste

Cooking Directions

  1. First coat the trotters with flour and leave it for half an hour in a strainer.

  2. Then wash it with luke warm water and put it in pan with 4 to 5 glass water, aniseed, whole coriander, whole garlic and salt.

  3. Leave it to cook on low heat for 2 - 3 hours till it tenders.

  4. Take out the big bones and strain the stock.

  5. Fry onion in a oil till it turns golden brown and crisp.

  6. Crush onion and mix with yogurt, turmeric powder, ginger garlic paste, coriander powder, roasted cumin powder and red chili powder and add in pan along with trotters.

  7. Add stock with all spice powder and simmer.

  8. When oil separates again put lemons juice, green chilies chopped, green coriander chopped and ginger.

  9. Serve it with naan.
