Ingredients

  • Apples 3
  • Egg yolk, beaten 1
  • Egg, beaten 1
  • Castor sugar 50 gm
  • Plain flour 2 tbsp
  • Double cream 114 ml
  • For the Pastry:
  • Butter into 100 gm sifted plain flour 65 gm
  • Egg yolk 1
  • Cold water 1 tbsp
  • Icing sugar 1 tbsp

Cooking Directions

  1. Rub the butter into the flour and icing sugar until the mixture resembles fine breadcrumbs.

  2. Mix to a dough with the egg yolk and cold water.

  3. Knead until smooth.

  4. Roll out to line a deep 8" loose-bottom flan tin.

  5. Chill for 30 minutes.

  6. Bake at 200°C for 15 minutes.

  7. Remove the pastry case and cool.

  8. Peel, core and halve the apples.

  9. Make shallow cuts in each half.

  10. Put in the pastry case.

  11. Mix the beaten egg and caster sugar and blend until pale and thick.

  12. Beat in the plain flour and double cream.

  13. Pour in to the pastry case.

  14. Bake at 190°C for 45 minutes.
