Vindaloo is an Indian curry dish popular in the region of Goa. It is slightly sweet and sour, very hot-spicy, and made with fresh-ground and chopped spices. Fish, chicken and eggs compliment vindaloo.

  • Red chilies 4 whole
  • Garlic cloves 10
  • Ginger 1 inch
  • Cumin seed ½ tsp
  • Vinegar ¾ cup
  • Salt to taste
  • Oil 2 tbsp
  • Onion 2 (chopped)
  • Cinnamon 1 inch
  • Sugar 1 tbsp
  • All spice powder 1 tsp
  • Eggs 4 (boiled and cut in half)

Cooking Directions

  1. Grind the red chilies, garlic, ginger and cumin seeds with a little vinegar and salt.

  2. Heat oil, add onion and fry till brown.

  3. Mix in the ground paste and cinnamon.

  4. Add in sugar, remaining vinegar and all spice powder.

  5. Mix in the egg halves.

  6. Stir fry till the gravy thickens.

  7. Garnish with coriander and serve with rice or rotis.
