Try this wonderfully easy mixed vegetable pickle where the flavour has been enhanced by adding dill and chillies.

  • Green Capsicum, Julienne cut 1 lb
  • Carrots, Julienne cut 1 1/4 lbs
  • Medium Cauliflower, broken into flowerettes 1
  • White Distilled Vinegar 2 Cups
  • Water 2 Cups
  • Salt 1/4 Cups
  • Garlic Cloves, Sliced 4 (Large)
  • Dill Seed 4 Tsp
  • Crushed Dried Red Pepper 1 Tsp

Cooking Directions

  1. To Prepare vegetables: Blanch separately green pepper and cauliflower 1 minute and carrots 2 minutes.

  2. Drain vegetables and rinse in cold water and let the water dry off.

  3. Heat mixture of vinegar, water and salt.

  4. Divide each vegetable into four parts.

  5. Place each vegetables into four jars

  6. Divide the garlic, dill seed and red pepper into 4 equal parts; add 1 part to each jar.

  7. Fill each jar with hot vinegar mixture.

  8. Place lids on and seal with ring.

  9. Process in boiling water bath 10 minutes.

  10. Remove and cool on wire rack or folded towel.

  11. Note: This recipe can also be used for pickling just cauliflower
