Slice the tomatoes.Add turmeric powder, salt and 1 cup vinegar and keep aside for 2 hours.Grind together ginger, garlic, red chills and 3/4 of the mustard seeds into a paste.

Ingredients

  • Tomatoes 500 gms
  • Red chillies 15-18
  • Ginger(chopped) 1 cup
  • Garlic(chopped) 1 cup
  • Vinegar 2 cups
  • Turmeric powder 1 tsp
  • Mustard seeds 1 tbsp
  • Meethi seeds 1 tsp
  • Oil 1 1/2 cups
  • Salt to taste

Cooking Directions

  1. Slice the tomatoes.

  2. Add turmeric powder, salt and 1 cup vinegar and keep aside for 2 hours.

  3. Grind together ginger, garlic, red chills and 3/4 of the mustard seeds into a paste.

  4. Heat oil in a pan, add remaining mustard seeds and when they crackle, add methi seeds.

  5. Fry for 2 minutes then add the grounded paste.

  6. Fry for another 20 minutes, stirring continuously.

  7. Add the remaining vinegar, tomatoes and salt.

  8. Stir continuously till the mixture comes to a boil and oil floats on the top.

  9. Remove from fire and allow it to cool.

  10. Store in an airtight jar.
