Ingredients

  • Ripe mango 1 medium-sized
  • Sugar 60 gms
  • Water 100 ml
  • Saffron 1 gm
  • Chopped coriander leaves 2 gms
  • Black pepper corns 1 gm
  • Cinnamon stick 1/2
  • For Yoghurt Sherbet:
  • Sugar syrup 25 ml
  • Glucose 25 ml
  • Yoghurt 250 ml
  • Fresh cream 125 ml
  • Milk 125 ml

Cooking Directions

  1. Peel mango and slice very finely. Keep aside.

  2. Boil water and sugar together till they achieve a syrup-like consistency.

  3. Add cinnamon and the freshly ground black pepper corn.

  4. Pour the syrup over the mango slices and keep aside for 30 minutes.

  5. Sprinkle saffron and coriander leaves and serve with yoghurt sherbet.

  6. To prepare yoghurt sherbet:

  7. Combine syrup and glucose in a casserole.

  8. Heat to 85 C and add the remaining ingredients.

  9. Chill for 12 hours to obtain an ice cream-like consistency.
